Ingredients

  • 2 bunch rocket, roughly chopped
  • 400 g noodles (orecchiette - ear noodles)
  • 8 tomato (s), peeled, pitted and cut into pieces
  • 30 olives, black, pitted, quartered
  • 2 cloves garlic)
  • 2 bell pepper (s), red, peeled, pitted and cut into pieces
  • 2 onion (s), red, cut into fine strips
  • 12 tablespoon olive oil
  • 6 tablespoon balsamic vinegar, white
  • 1 tablespoon honey
  • sea-salt
  • Pepper, black, freshly ground

Instructions

  1. Cook the pasta until al dente, drain and rinse in cold water. Then put the tomato and pepper pieces, olives, onions and rocket in a bowl and mix well.
  2. For the dressing, mix olive oil, vinegar and honey together well. Squeeze the garlic cloves and season with salt and pepper. Pour the marinade over the salad, mix and let sit in the fridge for about 2 hours.
