Ingredients

  • 250 g flour
  • 1 egg (s)
  • 0.5 teaspoon ½ salt
  • 80 g butter
  • 0.5 ½ cup water
  • 300 g beans, reen or yellow
  • 400 g pear (s) (cooked pears)
  • 275 g bacon, mixed, smoked
  • 125 liters sweet cream
  • 125 liters sour cream
  • 3 egg (s)
  • 1 tablespoon flour
  • 125 g cheese, rated, e.. Emmentaler
  • Pepper, black, freshly ground
  • 1 teaspoon thyme, dried

Instructions

  1. Put the flour in a bowl and make a well in the middle. Add the egg and salt and spread the fat cut into flakes over the top. Chop everything with a knife, add the water drop by drop and knead a firm dough. Line a greased springform pan with the dough and prick the base several times with a fork.
  2. Clean the beans, wash them, cut them into pieces and boil them in a little salted water, taking care not to cook them too soft.
  3. Wash, peel, quarter, core and slice the pears.
  4. Cut the bacon into strips, fry them and let the pear slices stew briefly. Drain both and distribute with the drained beans on the cake base.
  5. Whisk the cream with the eggs and stir in the flour. Add 100 g cheese and season the mixture well with freshly ground pepper and thyme. Only add a little salt as the smoked bacon is already salty. Pour onto the quiche, sprinkle with the rest of the cheese and bake in the preheated oven at 220 ° C, gas mark 4, for 40-50 minutes.
  6. Serve hot.
