Ingredients

For the dough:

  • 300 grams flour
  • 150 g butter
  • 1 egg (s)
  • salt

For covering:

  • 1 onion (s)
  • 150 g bacon, smoked, mixed
  • 2 pear (s), ripe
  • butter
  • 2 egg (s)
  • 150 ml whipped cream
  • 100 g mountain cheese, rated
  • salt
  • pepper
  • nutmeg
  • Oil, for greasing
  • Flour for rolling

Instructions

  1. Knead the flour, butter, egg and a pinch of salt with 5-6 tablespoons of cold water to form a smooth dough. Let rest in foil for 30 minutes.
  2. Peel and dice the onion. Cut the smoked bacon into thin strips. Halve the pears, peel them, remove the core and cut into slices.
  3. Leave out the bacon, add the onion and sauté until translucent. Add the butter and pear wedges. Braise the pears. Season with pepper and nutmeg.
  4. Mix eggs with cream and grated cheese, season with salt and pepper.
  5. Grease a quiche tin with oil.
  6. Roll out the dough on a floured work surface and line the mold with it. Spread the pear and bacon mixture on top and pour the egg cream over it.
  7. Bake in the preheated oven at 200 degrees for approx. 20-25 minutes.
