Ingredients

For the dough:

  • 400 g flour
  • 2 egg (s)
  • 150 ml water
  • 0.5 teaspoon ½ salt

For the filling:

  • 400 g minced meat, mixed
  • 50 g butter
  • 3 tablespoon heavy cream
  • 2 onions)
  • Salt and pepper, black
  • Garlic, as needed

For the sauce:

  • clove Garlic (s) or onions as needed
  • 2 tablespoon butter
  • 3 tablespoon vinegar
  • Salt and pepper to taste
  • Sour cream
  • some broth from stock cubes

Instructions

  1. Put the flour in a mixing bowl, make a well and add the water, egg and salt. Knead the whole thing into a firm dough (pasta dough), cover with a cloth and let rest for 20-30 minutes.
  2. Mix the meat with the finely chopped onions, butter, pepper and spices.
  3. Roll the dough into a strand (1.5 - 2 cm) and cut off pieces (1 - 1.5 cm). Roll cookies out of these parts. You can also roll out the dough to a thickness of approx. 2 mm and then cut out round pieces with a glass.
  4. Place the meat mixture on top with a spoon, enclose the meat in the batter and press the edges shut. Place the pelmeni in boiling salted water or in broth. After the water boils again and the pelmeni float to the surface, let it steep for another 2 - 3 minutes.
  5. Pour off the water. Put the pelmini in a bowl and cover with flakes of butter. The pelmeni can be served with butter, sour cream, with vinegar or with a mixture of chopped garlic or onions, vegetable oil, vinegar, salt and pepper.
