Ingredients

For the dough:

  • 100 ml water
  • 1 egg (s), size M
  • 1 tablespoon oil
  • 1 pinch (s) salt
  • 350 g flour, possibly a little more

For the filling:

  • 400 g minced meat, mixed
  • 1 ½ m. Onion (s), finely chopped
  • 0.5 ½ bunch parsley, finely chopped
  • 5 tablespoon water
  • Salt and pepper, black
  • Flour for the work surface

For the topping:

  • 1 medium onion (s), finely diced
  • 2 large carrots, roughly grated
  • 1 bell pepper (s), diced
  • 1 beefsteak tomato (s), peeled, diced
  • oil for frying

For the sauce:

  • 1 cup sour cream
  • 1 cup water
  • 1 large clove (s) garlic, pressed
  • Salt and pepper, black

Instructions

  1. For the dough, put the flour in a bowl. In a smaller bowl, whisk the water with the egg and salt and add to the flour with the oil. First stir with a spoon and then knead with your hands to form a smooth dough.
  2. This should still be supple, but no longer stick to the hands, possibly add a little more flour. Wrap the dough in cling film and let it rest for about 30 minutes.
  3. During this time, prepare the vegetables. Heat the oil in a pan, sweat the finely diced onion in it until translucent, add the carrots and cook for another 5 minutes, stirring occasionally on a medium heat. Add the tomato paste, stir and fry lightly.
  4. Then put the pepper and tomato cubes in the pan, stir well and fry lightly. Take it off the stove and set it aside for now.
  5. For the filling, mix the minced meat, onion, parsley and water well together. Salt and pepper.
  6. Now knead the dough again on a floured work surface and divide it into two parts. Wrap one part back into the foil and set it aside and roll out the other part of the floured work surface into a circle with a diameter of approx. 50 cm.
  7. Spread half of the minced meat evenly on it, roll it up into a roll and cut it into 3 cm long pieces. Place the rolls in a coated pan with a cut surface facing down and a small distance from each other. Do the same with the second half of the dough and minced meat. Then distribute the fried vegetables on the rolls.
  8. Put a beaker of sour cream in a bowl, measure with the same beaker of water and add. Add salt, pepper and a clove of garlic, crushed by a garlic press, and stir until smooth.
  9. Pour the sauce over the minced meat rolls and cover the pan. Bring to a boil. Then reduce the heat and cook the minced meat rolls over medium heat for about 30-35 minutes. It is essential to watch out for the liquid, it must not evaporate completely.
