Ingredients

  • 500 g pork fillet (s)
  • 1 lime (s)
  • 3 tablespoon soy sauce
  • 1 tablespoon sugar, brown
  • 2 cloves garlic
  • 2 leeks
  • 1 large mango (s), not quite ripe
  • 6 tablespoon oil
  • 1 tablespoon curry powder, hot
  • 1 tablespoon coriander, ground
  • 125 ml meat stock
  • Salt and pepper, black

Instructions

  1. Cut the fillets into thin slices. Wash lime in hot water, dry. Finely grate the peel, squeeze out the juice. Mix both with soy sauce and sugar. Peel and squeeze the garlic cloves. Turn the meat in it, cover and marinate for 1 hour.
  2. Clean and wash the leek and cut diagonally into 0.5 cm thick slices. Peel the mango, cut the pulp from the stone, dice. Drain the meat well and collect the marinade.
  3. Heat 4 tablespoons of oil in the wok. Brown the meat in portions for 1-2 minutes. Remove. Heat the remaining oil in the wok, steam the curry and coriander for 1 minute while stirring. Add the leek and stir-fry for 3 minutes.
  4. Pour in the marinade and stock, bring to the boil and cook the leek for 2 minutes. Mix in the meat and mango. Let everything steep for another minute over medium heat, season with salt and pepper.
  5. Basmati fits in with that.
