Ingredients

  • 1 ½ kg roast beef for braising
  • 1 kg mushrooms
  • 500 g shallot (s)
  • 30 g clarified butter
  • 6 bay leaves
  • 1 cup crème fraîche
  • salt and pepper
  • 2 tablespoon sauce thickener, darker

Instructions

  1. Rub the meat with salt and pepper. Fry vigorously on all sides in the clarified butter. Cover and cook in the preheated oven at 225 degrees for 1 1/2 - 2 hours. Gradually add 1/4 liter of water.
  2. Clean and wash the mushrooms, peel the shallots. After about an hour, add both with the bay leaves to the meat.
  3. Take out the finished meat and cut into slices. Serve with mushrooms and shallots and keep warm. Bring the sauce to the boil, stir in the creme fraiche, season with salt and pepper and bind with a sauce thickener.
