Ingredients

  • 500 ml coconut milk
  • 200 ml vegetable stock
  • 3 tablespoon soy sauce
  • 1 tablespoon curry powder
  • 600 g potatoes, waxy
  • 2 spring onion (s)
  • Thaw 300 g frozen peas beforehand
  • 200 g mushrooms, brown
  • 0.5 ½ lime (s)
  • 8 sprigs coriander

Instructions

  1. Peel the potatoes and cut into cubes (approx. 2 cm). In a saucepan, bring the coconut milk and vegetable stock to the boil together with the soy sauce and curry powder. Add the potato cubes and simmer for about 15 minutes.
  2. Add the peas, squeeze the lime over the saucepan, stir and heat for another 5 minutes.
  3. In the meantime, cut the washed spring onions into fine rings and slice the cleaned mushrooms. Roughly pluck the coriander and chop it.
  4. Put the One Pot in bowls and top with the mushrooms, spring onions and coriander if you like.
