Ingredients

For the dough:

  • 300 g wheat flour, type 1050
  • 165 ml water, lukewarm, approx
  • 1 pack dry yeast
  • 1 tablespoon olive oil
  • 1 teaspoon, heaped sea salt
  • 0.5 teaspoon ½ raw cane sugar
  • 1 packet puff pastry, approx. 275 g

For the brew: (caustic soda)

  • 1 packet baking soda, 30 g
  • 1 ½ liters water
  • 2 tablespoon sesame seeds, for sprinkling
  • some flour for the tray

Instructions

  1. Make a smooth yeast dough from the first six ingredients and cover and let rise for 15 minutes.
  2. Roll up the puff pastry.
  3. Roll out the yeast dough to the size of the puff pastry. Place the puff pastry on top of the yeast dough and press down well. Fold the resulting double dough in half from top to bottom. Then fold the dough in half again from right to left. Then roll out the dough back to its original size. Fold the dough twice as described above and roll it out again to the original size. Fold the dough a third time as described above and let it rest for 10 minutes covered with a cloth. Then roll out the dough into a round shape. The dough should have a diameter of approx. 50-55 cm. Cut the dough into 8 pieces of cake and roll up each piece of cake from the broad side. Cover the croissants and let rise for 30 minutes.
  4. Meanwhile preheat the oven to 210 ° C (top and bottom heat). Line a baking sheet with parchment paper and dust the parchment paper thinly with flour.
  5. For the caustic soda, boil the water in a large saucepan and add the baking soda.
  6. Put the croissants in the sodium hydroxide solution with a slotted spoon and let them steep for 1 minute. Then lift the croissants out again with the slotted spoon, drain well and place on the floured baking sheet. Sprinkle the croissants with sesame seeds and bake in the preheated oven at 210 ° C for 20-25 minutes.
