Quiche with Mushrooms and Cheese

Ingredients

For the test:

  • Wheat flour – 200 g
  • Butter – 90 g
  • Salt – 1 pinch
  • Yolk – 1 pc.
  • Coldwater – 50 ml

For filling:

  • Champignons – 400 g
  • Eggs – 4 pcs.
  • Sour cream 20% – 500 ml
  • Hard cheese – 150 g
  • Butter – 10 g
  • Ground nutmeg – ½ teaspoon
  • Fresh thyme – 3-4 branches
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Before preparing the quiche with mushrooms and cheese, we prepare all the necessary products. The butter must be cold, so remove it from the refrigerator just before cooking.
  2. Sift the flour into a bowl, add salt. Cut the cooled butter into cubes and add to the flour. Use our hands to grind the flour and butter into crumbs. Separate the yolk from the protein. We don’t need protein. Mix the yolk with cold water. Pour a mixture of yolk with water into flour crumbs.
  3. Knead the dough quickly. We form a ball. We wrap the dough with cling film and send it to the refrigerator for 1 hour.
  4. After the specified time, turn on the oven to heat up to 180 degrees. We take out the dough from the refrigerator. On a well-floured table, roll out the dough into a round layer 5 mm thick.
  5. We transfer the dough layer into a detachable form, from the sides. We prick the bottom of the base with a fork. Cover the base with parchment paper. We spread 200 g of cargo on paper (you can use any cereal that is at hand). We send the form with the dough to the oven, preheated to 180 degrees, for 15 minutes.
  6. After a while, we take out the form from the oven, remove the paper with the load and let the base cool completely. Wash the mushrooms and cut them into slices.
  7. In a frying pan in butter, fry the mushrooms until golden brown. Three cheese on a coarse grater. Break eggs into a convenient bowl, add sour cream, grated cheese, thyme leaves, and ground nutmeg. Salt and pepper to taste. We mix.
  8. Put half of the fried mushrooms into the cooled dough base. Fill the mushrooms with the egg-sour cream mixture. Spread the remaining mushrooms evenly on the filling. We send the form to the oven again. We bake quiche with mushrooms and cheese at 180 degrees for 40-50 minutes.
  9. Open pie “Quiche Lauren” with mushrooms and cheese is ready. We take the quiche out of the oven, let it cool slightly, and remove it from the mold.
