Ingredients

  • 500 g minced meat (beef)
  • 300 g liver sausae (Palatinate liver sausae)
  • 2 large onions, finely chopped
  • 250 g parsley, finely chopped
  • 2 liters beef broth or veal broth
  • pepper
  • 2 egg yolks
  • breadcrumbs

Instructions

  1. Knead the minced beef with the Palatinate liver sausage, egg yolks, finely chopped onions, 100 g finely chopped parsley and breadcrumbs for about 10 minutes. Season to taste with pepper.
  2. In the meantime, warm up the broth. Shape the dumplings out of the meat dough and simmer for about 20 minutes in the slightly simmering broth. Just before serving, add the remaining parsley to the broth.
  3. Tips: Since the Palatinate liver sausage is already heavily seasoned, no further spices are necessary.
  4. You can also replace part of the broth with beef or veal stock.
