Ingredients

  • 6 egg yolks
  • 200 g suar
  • 250 ml milk
  • 350 ml cream
  • 1 vanilla pod (s)
  • 10 ml Grand Marnier
  • 200 g raspberries, pureed and driven throuh a sieve

Instructions

  1. Cut into the vanilla pod and bring to the boil with milk. Beat the egg yolks with sugar over the water bath until they are warm and frothy, slowly add the milk and beat for 2 minutes. Beat the egg milk again and add the Grand Marnier. Whip the cream and carefully fold in with the raspberry puree.
  2. Put the parfait in the freezer and let sit for 30 minutes.
