Red Fish Salted with Lingonberry and Juniper

An original way of salting red fish, worthy of a festive table. The pleasant berry taste of lingonberry and the coniferous aroma of juniper make the fish unforgettably tasty.

Ingredients

  • Red fish (salmon, etc.) – 300 g
  • Lingonberry – 100 g
  • Juniper (berries) – 20 pcs.
  • Cognac – 30 ml
  • Salt – 2 teaspoon
  • Sugar – 1 teaspoon
  • Black pepper – 1 pinch

How to cook red fish salted with lingonberries and juniper:

Directions

  1. Free the fish from the spine and rib bones, cut off the skin.
  2. Mash the juniper berries into large crumbs.
  3. Mash lingonberries in mashed potatoes.
  4. Mix together salt, sugar, pepper, and juniper.
  5. Mix everything well.
  6. Sprinkle the red fish with cognac and sprinkle on all sides with a mixture for salting with juniper.
  7. Now we will coat a piece of fish with mashed lingonberries on all sides.
  8. We tighten the bowl of fish with cling film and put it in the refrigerator for a day.
  9. After a day, we take the salted red fish out of the refrigerator and free it from the lingonberries.
  10. Dry the fish with paper towels.
  11. Red fish salted with lingonberries and juniper is ready. Cut the salted fish into thin slices and serve.
