Ingredients

  • 100 g millet
  • 1 small cucumber (s) or /2 cucumber
  • 4 stalks parsley
  • 2 stems mint
  • 2 tomato (s)
  • 0.5 ½ lemon (n)
  • 2 tablespoon olive oil
  • salt and pepper

Instructions

  1. Prepare the millet according to the instructions on the packet and stir regularly. Put the millet in a bowl, season with salt and leave to cool. In the meantime, wash the cucumber, cut in half, core and finely dice. Wash, quarter, core and dice the tomatoes.
  2. Squeeze the lemon. Wash the parsley and mint, shake dry and just pluck the leaves and chop finely.
  3. Mix all ingredients in a bowl. Add olive oil and lemon juice, season with salt and pepper and mix everything well.
  4. Tip: If you like it a little hotter, you can season the millet salad with a little chili powder or rose-hot paprika powder.
  5. The mint and lemon make this salad very refreshing, especially in summer, and the millet will keep you full for a long time.
