  • 2 ½ kg roast beef
  • 100 g clarified butter

Instructions

  1. Salt and pepper the roast beef, then fry it all over in the clarified butter for 20 minutes (important!). Then place on the oven shelf - the air must be able to circulate freely and cook for 5 - 6 hours at a constant 80 degrees Celsius. A drip pan prevents the little roast juices that come out of the oven from dirtying the oven. It is really important to sear them for a long time and to keep the temperature constant!
  2. The time is then rather irrelevant: Half an hour more or less does nothing. The meat is soft as butter, pink throughout and very spicy.
  3. We also have gratin and salad or vegetables. Since there is no gravy, I help myself with gravy from the supermarket and mix up a delicious red wine sauce.
  4. We traditionally have this on Christmas Eve, so the giving of presents can take longer!
