Ingredients

  • g 1,200 pork neck
  • Salt and pepper, black, from a mill
  • 2 tablespoon clarified butter
  • 3 onion (s)
  • 200 ml meat stock (possibly instant)
  • 2 teaspoons pepper - grains
  • 3 tablespoon juniper berries
  • 250 ml beer
  • 2 teaspoons caraway seeds
  • 600 g potato (s)
  • 750 g leek, thin sticks

Instructions

  1. Rub the pork neck with salt and pepper and fry vigorously on all sides in a roasting pan with the onions. Pour approx. 100 ml of the stock, add the pepper and juniper berries in a tied gauze bag.
  2. Now put the roasting pan in a temperature of 200 ° C. Put in the preheated oven and stew for about half an hour without the lid.
  3. Add a little beer and broth every now and then. After the 30 minutes braising time, put the lid on the roasting pan and let simmer for another 70 minutes. Sprinkle the potatoes with caraway seeds and add after 40 minutes. Place the leek, blanched, in the roaster after 80 minutes.
