Ingredients

  • 250 g rocket
  • 1 large onion (s)
  • 8 egg (s)
  • 150 g feta cheese
  • 2 tablespoon olive oil
  • Salt and pepper

Instructions

  1. Wash the rocket, shake dry, remove coarse stems and roughly chop. Peel the onions and cut into fine cubes.
  2. Bring the olive oil to temperature in an ovenproof pan and fry the onion cubes until translucent. Add the chopped rocket and fry for another 2 - 3 minutes while stirring. Take the pan off the heat and let it cool down a little.
  3. In the meantime, preheat the oven to approx. 200 ° C top / bottom heat.
  4. Beat the eggs in a bowl until frothy and season to taste. Then pour the egg mixture over the fried rocket and distribute evenly. Crumble the feta over the mixture and let it set in the preheated oven for about 15-18 minutes.
  5. Alternatively, let the frittata set in the pan with the lid over low to medium heat.
