Ingredients

  • 80 g rocket
  • 1 pomegranate
  • Vinegar, (date balm)
  • Balsamic vinegar
  • olive oil
  • Cheese, (pecorino)
  • salt
  • Pepper from the grinder

Instructions

  1. Wash the rocket and remove the stalks, spin dry.
  2. Cut the lid off the pomegranate and score the peel on the chambers. Break the fruit into pieces and remove the stones.
  3. Cut the pecorino into strips with the peeler.
  4. Mix salt and pepper with balsamic vinegar and date balm. Add the olive oil and stir the marinade until creamy.
  5. Mix the rocket and pomegranate seeds, mix with the marinade. Arrange on plates and mix with the pecorino.
