Ingredients

  • 4 orange (s)
  • 2 leeks
  • 4 tablespoon olive oil
  • 2 tablespoon pine nuts
  • 1 tablespoon raisins
  • 2 tablespoon vinegar, (white wine vinegar)
  • salt and pepper
  • sugar
  • 250 g salmon fillet (s)
  • 1 tablespoon butter
  • possibly orange juice

Instructions

  1. Peel the oranges so that the white skin is also removed, fillet them and collect the juice. Clean and wash the leek and cut into very fine rings. Fry in 3 tablespoons of hot oil for about 2 minutes. Fry the pine nuts and raisins for about ½ minute. Serve everything with the orange fillets.
  2. Put 1 tablespoon of oil with vinegar and the collected orange juice in the pan, season with salt, pepper and sugar, add a little orange juice if necessary. Drizzle the sauce over the salad.
  3. Rinse the salmon fillets, pat dry and cut into bite-sized pieces. Fry in hot butter for about 4 minutes, turning once. Salt and pepper. Place the salmon pieces on the salad.
  4. Fresh baguette goes well with it.
