Ingredients

  • 5 stalks black salsify (s), fresh
  • 1 dash vinegar for peeling
  • 1 dash condensed milk or cream
  • 1 teaspoon lemon juice
  • 2 pinches salt
  • 1 pinch (s) sugar
  • 1 tablespoon flour
  • 1 egg yolk
  • 25 g butter
  • 3 medium wild garlic leaves

Instructions

  1. Wash the salsify stalks, then peel them quickly and place them in a bowl or saucepan with vinegar water, otherwise they will tarnish and turn brown. Then remove the sticks, cut them into bite-sized pieces and place them in a saucepan with water so that everything is covered. Add salt, sugar, condensed milk and lemon juice to the cooking water and cook the salsify firm to soft, depending on your taste.
  2. Let the cooking water boil down until there is almost nothing left, then add the butter and thicken slightly with the flour. Take everything off the flame, let cool down a bit and fold in the egg yolks.
  3. Then arrange everything on the plate and finally sprinkle with the wild garlic cut into strips.
