Ingredients
- 200 g pasta, e.., Farfalle
- 250 g scampi, peeled and deveined
- 200 g suar snap peas
- 1 small zucchini
- 1 clove garlic
- 2 spring onion (s)
- 250 ml broth
- 3 tablespoon crème fraîche
- 2 teaspoons olive oil
- salt and pepper
- Cayenne pepper
- 2 tablespoon lemon juice
- 1 handful cocktail tomatoes

- Cook the pasta until al dente according to the instructions on the packet.
- In the meantime, fry the peppered scampi in the olive oil for 1-2 minutes while turning, then remove.
- Cut the garlic clove into slices and fry, add the diced vegetables and fry for 1-2 minutes, deglaze with the lemon juice and the stock. Add the crème fraîche and simmer. Season to taste with salt, pepper and cayenne pepper. You can now put the scampi back in the pan.
- Add the cooked noodles to the pan and mix in the halved cocktail tomatoes just before serving.
