  • 1 bunch soup greens
  • 1 large onion (s)
  • 2 bay leaves
  • 4 allspice grains
  • 4 peppercorns
  • 4 clove (s)
  • 4 cardamom pods
  • 1 teaspoon sea salt
  • 1 sprig thyme
  • 1 sprig rosemary
  • 800 g beef bones or chicken carcasses
  • 1 ½ liters water

Instructions

  1. Clean the soup greens and cut into small pieces. Peel and chop the onion. Put all ingredients - if you have meat or chicken broth, don`t forget the bones - in a saucepan with about 1.5 liters of cold water until everything is covered. Bring to a boil, then reduce the heat and simmer over low heat for about 2 hours. Skim off the resulting foam with a skimmer.
  2. Pour the broth through a sieve or cloth and collect the liquid. Degrease the broth if necessary.
  3. I use organic products for bones and vegetables.
