Make a yeast dough from the ingredients listed. Let rise in a mixing bowl with a lid for about 30 minutes. Roll out the yeast dough into a rectangle approx. 35 x 25 cm.
Brush the dough sheet with melted butter and sprinkle with the cinnamon-sugar mixture and the raisins. Roll up the dough and cut into 3 cm wide slices. Let rise on the baking sheet for about 10 minutes, brush with egg yolk and bake in the preheated oven on the middle rack at 200 degrees for about 25 minutes.
Mix the powdered sugar and water. After baking, spread on the still hot snail noodles.
Can also be baked and frozen well in advance. Simply defrost in the microwave for approx. 2 minutes at approx. 180 watts and taste like freshly baked.
