Soup with Mussels, Noodles and Vegetables, Chicken Broth

A fragrant, delicious soup with mussels will appeal to those who love seafood.

Ingredients

  • For broth:
  • Chicken drumsticks – 2 pcs.
  • Celery stalk – 0.5 pcs.
  • Carrots – 50 g
  • Onions – 50 g
  • Garlic – 1 clove
  • Bay leaf – 1 pc.
  • Allspice peas – 3 pcs.
  • Thyme – 2 branches

  • Mussels (frozen) – 300 g
  • Tomato (large) – 200 g (1 pc.)
  • Noodles – 75-100 g
  • Olives – 100 g
  • Onions – 50 g
  • Celery stalk – 0.5 pcs.
  • Chili pepper – 1/3 pcs.
  • Green onion – several feathers
  • Soy sauce – 3 tbsp
  • Butter – 25 g
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. For the broth, place the chicken drumsticks in a saucepan and pour 0.5 liters of water. Peel the onions, garlic and carrots. Cut the celery stalk into random pieces. Add vegetables, bay leaves, allspice and thyme to the pan. Bring to a boil and cook for about 30 minutes after boiling. Then we take out the chicken drumsticks from the pan, they can be used to prepare another dish. Strain the broth.
  2. Preparing the rest of the ingredients for the soup. The mussels must first be defrosted. Peel and rinse the onions. Cut the chili into thin rings. Cut the onions into small pieces. In a saucepan or heavy-bottomed saucepan, melt the butter and fry the chopped onions and chili. Cooking for 2-3 minutes. Add half of the mussels to the onion and cook for another 3 minutes. Pour 0.5 liters of water into a saucepan, bring to a boil and cook for 5 minutes. Meanwhile, chop the tomato into medium slices. Cut the olives into rings. Cut the celery into small pieces.
  3. Pour chicken broth into a saucepan, add chopped tomatoes, olives and celery. Place the remaining mussels and bring the contents to a boil. Add noodles to the soup, salt and pepper to taste. Cook until the noodles are ready (the time indicated on the package). Chop green onions. Add soy sauce and green onions to the soup. Pour the soup into bowls and serve.
