Ingredients

  • 250 g flour
  • 8 egg (s)
  • 375 ml milk
  • 2 tablespoon powdered sugar
  • 1 pinch (s) salt
  • 100 g clarified butter, for bakin
  • 50 g raisins, marinated in rum
  • 4 tablespoon powdered sugar, for sprinkling

Instructions

  1. Separate the eggs, mix the flour with the egg yolk, milk, powdered sugar and salt to a smooth dough. Let it soak for 20 minutes. Beat the egg white until stiff and fold it loosely into the batter.
  2. The pancakes are baked in a large pan in 3-4 portions. Heat a little clarified butter, pour in 1 portion of batter, sprinkle with raisins, bake lightly. Then turn and bake the other side as well; Tear it into small pieces with 2 forks, add some fresh clarified butter and quickly finish baking while constantly turning. The pieces should remain tender and not dry out.
  3. Arrange the pancakes on a platter, dust with powdered sugar and serve immediately.
