Ingredients

For the rub:

  • 6 tablespoon paprika powder, noble sweet
  • 2 tablespoon paprika powder, hot pink
  • 2 tablespoon pepper, freshly ground
  • 2 tablespoon onion powder
  • 2 tablespoon garlic powder

For the sauce:

  • 800 ml orange juice, fresher
  • 300 ml whiskey (e.g. Jack Daniels)
  • 400 ml ketchup
  • 2 tablespoon Worcestershire sauce
  • 6 tablespoon rub
  • 6 tablespoon honey
  • 6 tablespoon sugar, brown
  • 900 ml BBQ sauce (e.g. Old Texas BBQ Sauce - Original)
  • Tabasco or chilli to taste

Also:

  • 7 kg spare ribs (e.g. Iberico spare ribs)

Instructions

  1. It is best to prepare spare ribs the evening before: it is essential to peel off the silver skin on the back of the spare ribs beforehand, e.g. lift it with the handle of a spoon.
  2. Preparation rub: Put all ingredients in a mortar and mash lightly (the rub will keep for several months in a mason jar).
  3. Rub the spare ribs on both sides with the rub and cover overnight in the refrigerator in the roaster. This way the spare ribs are marinated nice and dry. Incidentally, the salt does not remove any moisture from the meat! The spare ribs are always very juicy and tasty.
  4. Save 6 tablespoon rub for the sauce!
  5. Preparation of spare ribs: Take the spare ribs out of the refrigerator and cover them in the roaster on the lowest rack at 120 degrees in the oven. There the spare ribs can simmer for 6 hours. This will make the ribs infinitely tender and fall off the bone. The spare ribs can be stacked in the roaster without any problems, that`s no problem at all! The fat can slowly dissolve and drip onto the other ribs, so they marinate themselves permanently and are really juicy. At the end, the spare ribs can be browned if necessary using the grill function.
  6. Preparation of the sauce: bring the orange juice, Worcestershire sauce, whiskey and brown sugar to the boil in a saucepan or pan with a high rim and reduce until only about half is left (let simmer for about 20 minutes). Then stir in the remaining ingredients and cook for another 20 minutes. Season the sauce with Tabasco, chilli, etc. depending on the degree of spiciness you want.
  7. Serve the sauce separately and pour onto the spare ribs on the plate. As a result, the spare ribs are crispy, juicy and have the great aroma of the homemade BBQ sauce.
