- 200 g ham, diced, lean raw
- 2 bunches chives
- 3 egg (s)
- 375 g low-fat curd cheese
- 1 cup cream
- 3 tablespoon, leveled flour
- 30 g butter, room temperature
- 1 teaspoon, leveled cayenne pepper
- salt
- Pepper, freshly ground
- 200 g cheese, rated spicy

- Boil the potatoes in their skins, let them cool down, peel them and cut them into slices (works well the day before).
- Put the potato slices with the ham cubes in a baking dish. Thoroughly whisk the eggs, quark, cream, flour and butter, cut the chives into rolls and add the cayenne pepper (if you like, you can also add 1-2 chopped garlic cloves). Salt and pepper a little, stir the sauce again and pour over the potato and ham mixture.
- Put the casserole in the oven at 200 degrees for 30 minutes. Sprinkle with the cheese and bake for another 10 minutes.
- The casserole can be prepared well in the morning, so the sauce gets better in the potatoes.
- In summer I like to put tomato slices on the casserole.
