Sponge Cake with Butter and Protein Cream

Easy to prepare and delicious sponge cake that can be made in just an hour. The cake just melts in your mouth! We will prepare the cake cream from egg whites and cream.

Ingredients

For a biscuit:

  • Eggs – 4 pcs.
  • Sugar – 1 cup (250 g)
  • Flour – 1 glass
  • Salt – a pinch
  • Baking powder – 0.5 teaspoon

For the cream:

  • Egg whites – 3 pcs.
  • Cream (any fat content) – 50 g
  • Powdered sugar – 150 g
  • Vanilla sugar – 0.5 teaspoon

For decoration:

  • Shortbread cookies – 3 pcs.
  • Berries to taste

Directions

  1. The first step is to prepare the dough. Break eggs into a container.
  2. Add sugar and salt. Beat well with a mixer until a fluffy mass is obtained.
  3. Add flour and baking powder to the mass. Mix with a mixer, the dough should turn out to be airy.
  4. Grease the baking dish with oil or cover with parchment paper. Pour the dough into a mold. We send the biscuit to bake in an oven preheated to 180 degrees for 40 minutes. We check the readiness of the biscuit with a toothpick.
  5. Leave the finished biscuit to cool.
  6. While the biscuit is cooling, prepare the cream. We send 3 egg whites into the container, add powdered sugar, vanilla sugar, and cream. Beat well with a mixer.
  7. Cut the biscuit into two halves, and grease one part with cream.
  8. Cover with the second part of the biscuit, gently pressing down with your hands. And grease the surface of the cake with the remaining cream from all sides.
  9. Grind the cookies and sprinkle them on the surface of the cake.
  10. Decorate the cake with berries to taste.
  11. Send the finished sponge cake with butter and protein cream to a cold place for several hours so that it is soaked.
