Ingredients

  • 600 g salmon or salmon trout with skin
  • 1 teaspoon salt
  • some white pepper (better: lemon pepper)
  • some lemon juice
  • 150 g cheese (pecorino)
  • 150 g parmesan cheese
  • 1 bunch fresh basil
  • 1 bunch rocket, fresher
  • 50 g pine nuts
  • 8 small clove (s) garlic
  • 1 glass dried tomato (s)
  • 100 ml olive oil
  • Seasoned Salt
  • Chilli flakes
  • pepper from the grinder

Instructions

  1. For the green pesto, cut 1/3 of the cheese into cubes and fill in a food processor with a cleaver. Add the basil, rocket and 3 cloves of garlic.
  2. Briefly toast the pine nuts in a pan and put about 1/3 of them in the food processor. Season to taste with herb salt and pepper. Chop everything up roughly. Then gradually pour in part of the olive oil and puree everything really well on the highest level.
  3. For the red pesto, cut 1/3 of the cheese into cubes and put in the food processor. Add the sun-dried tomatoes and 3 cloves of garlic and put another third of the roasted pine nuts in the food processor.
  4. Season to taste with herb salt and chili pepper. Coarsely chop, gradually pour in part of the olive oil and puree everything at the highest level.
  5. For the yellow pesto: This time only grind the cheese and the remaining 2 cloves of garlic in the food processor. Otherwise proceed as before (remaining pine nuts, herb salt, pepper, olive oil).
  6. Preheat the oven to 225 ° C. Cut the salmon fillet into 4 parts, drizzle with a little lemon juice and let it steep for a few minutes. Then place skin down in an ovenproof dish, season with salt and pepper.
  7. The 3 types of pesto are now spread over the salmon as vertical, horizontal or diagonal strips (depending on how you want to decorate the fish). Bake in the preheated oven for about 15-20 minutes. Serve with dill potatoes and salad.
  8. The pesto recipe comes from the user jonielady (Pesto Tricolore) and for me it is the world`s best pesto recipe. It`s what gives the salmon that special touch!
