Ingredients

For the salad:

  • 500 g tortellini, flavor your choice
  • 400 g cherry tomato (s)
  • 80 g olives, black
  • 2 spring onion (s)
  • 50 g sunflower seeds
  • 10 tomato (s), dried, in oil
  • 10 basil leaves
  • 100 g ricotta

For the dressing:

  • 2 tablespoons sun-dried tomato oil
  • 2 teaspoons mustard, medium hot
  • 1 tablespoon crème fraîche
  • 2 tablespoon olive oil
  • 5 tablespoon white wine vinegar
  • salt and pepper

Instructions

  1. For the tortellini salad, cook the tortellini according to the instructions on the packet. Once these are ready, drain them and put them in a bowl. While the tortellini is cooking, the cherry tomatoes can be halved and the olives cut into rings. Now cut the spring onions into rings and roast the sunflower seeds. Next, cut the pickled tomatoes and basil into strips and add everything to the tortellini in the bowl. Now distribute the ricotta in blobs on the salad. Finally stir the dressing together and pour over the salad, mix everything well.
