Ingredients
- 400 g sweet potato (s)
- 400 g carrot (s)
- 1 bunch spring onion (s)
- some oil
- 750 ml vegetable stock
- 3 banana (s)
- 1 tablespoon ginger root, grated
- 400 ml coconut milk
- salt and pepper
- Chili powder
- Curry powder
- 1 tablespoon anise
- Garam Masala
- some stalks mint

- First cook the sweet potatoes. Meanwhile, grate the carrots and cut the spring onions into small pieces. Mash the bananas with a fork and grate the ginger. Chop the mint and grind or mortar the aniseed seeds.
- Heat the oil in a saucepan, sauté the carrot grated and spring onions briefly. Add the vegetable stock and simmer for 5 to 10 minutes. Then add the cooked sweet potatoes, cut into cubes, the bananas, the ginger and the ground aniseed. Bring everything to the boil again, remove from the stove and puree everything. You gradually add the coconut milk. Then with salt, pepper, chilli, curry and garam masala, depending on your preference, more hot or mildly spiced and chopped mint is added. Bring to the boil again briefly and decorate with chopped mint or whole mint leaves before serving.
- Tip:
- I cook the sweet potatoes by quartering them and steaming for about 15 minutes. Then I just peel off the pods. This is the best way to preserve the taste.
