Ingredients
- 400 g sweet potato (s)
- 1 mango (s), ripe
- 1 zucchini, more depending on the size
- 2 cloves garlic)
- 1 onion (s)
- 1 chilli pepper (s), red
- 20 g iner root, fresh
- 500 ml coconut milk
- 350 ml vegetable stock, vegan
- 2 tablespoon fruit juice B. apple or mango juice, depending on your taste also 3 - 4
- 2 tablespoon rapeseed oil
- 1 tablespoon lime juice
- Salt and pepper from the mill

- Peel the sweet potatoes and cut into 1 cm cubes. Peel and chop the garlic cloves, onion and ginger. Cut the zucchini into fine cubes. Peel the mango, remove the pulp from the stone and finely dice. Cut the chilli pepper into fine rings. Warning: if the chilli pepper is very hot, use less!
- Heat the oil in a saucepan and sauté the onion for about 3 minutes. Then add the ginger and garlic and sauté briefly until the pungent smell subsides. Add the sweet potato cubes and sauté for a while. Deglaze everything with the stock and coconut milk, bring to the boil and cover and simmer over medium heat for approx. 10 minutes. Then add the zucchini to the soup and simmer for another 10 minutes, until the sweet potatoes and the zucchini are cooked through. Finely puree the soup with the blender. Now add the mango pieces, chilli pepper and fruit juice. Bring the soup to the boil again briefly and season with lime juice, salt and pepper.
