Ingredients
- 1 kg sweet potato (s)
- 400 ml coconut milk, creamy
- 1 liter vegetable stock
- 1 onion (s)
- 1 tablespoon, heaped curry paste, preferably yellow
- 1 piece (s) ginger, about /2 tablespoon
- 1 teaspoon salt
- Lemon juice
- parsley
- Chives for garnish

- First the onion and ginger are finely chopped and seared.
- After the onions are translucent, the curry paste and salt are added and roasted briefly. Then the peeled sweet potatoes are added, preferably in small cubes, as this reduces the cooking time. Now everything is topped up with the coconut milk and the vegetable stock and brought to the boil. When the sweet potatoes are soft enough (approx. 15-20 minutes), the pot is removed from the stove and everything is left to cool briefly. Now everything is pureed with a hand blender. The soup can now be reheated.
- It can be served garnished with chives and / or parsley.
- Tip: Depending on their taste, everyone can add a few squirts of lemon juice to the soup, this will freshen up the soup a little.
