- 1 sweet potato (s)
- 1 avocado (s)
- 100 g feta cheese
- 1 handful lamb`s lettuce
- Chilli flakes
- Lemon juice
- salt and pepper

- Wash and clean the tuber thoroughly. Then cut into 0.5 - 2 cm thick slices.
- Toast the slices of sweet potato two or three times (depending on the toaster) on the highest setting so that they turn golden brown or have the consistency you want.
- In the meantime you can prepare your ingredients for the topping - simply cut the feta into small pieces and wash the lamb`s lettuce. For the avocado mousse, simply mash the avocado with a fork and add a little lemon juice if necessary.
- When the toast has the desired consistency, brush with the avocado and top with feta and lamb`s lettuce. Depending on your needs, you can sprinkle the sweet potato toast with salt, pepper and chilli flakes and your sweet potato toast is ready!
