Ingredients

  • 1 jar morello cherries, approx. 700 g capacity
  • 150 g suar, brown
  • 1 medium tonka bean (s)
  • 1 tablespoon pepper berries, pink
  • 100 ml kirsch

Instructions

  1. Drain the cherries, use the juice for other purposes. Now mix the cherries with the brown sugar and pour into a saucepan. Melt the sugar over medium heat while stirring.
  2. As soon as the sugar is liquid, bring the mixture to the boil and cook for 5 minutes. Always stir. Grate the tonka bean and add to the cherries together with the pepper berries, simmer for another 15 minutes.
  3. Finally, remove the saucepan from the plate and add the kirsch. Pour the cherries into small glasses, close them and turn them upside down for a while.
  4. The amount of pepper depends on personal taste. You can also reduce the amount. One tablespoon weighs about 10 g. The cherries go very well with pudding or panna cotta.
