Ingredients
- 1 can tomato (s), chunky
- 300 ml water
- 1 small fennel
- 1 onion (s)
- 1 teaspoon curry paste, red, vegan
- 2 tablespoon peanut butter (peanut butter)
- 2 teaspoons rice vinegar
- 1 teaspoon sugar (coconut blossom sugar)
- 3 pinch (s) salt
- 1 tablespoon oil

- Cut the fennel into small cubes. Chop the fennel greens and set aside. Finely chop the onion. Sweat the fennel and onion cubes in a little oil. Add the curry paste and sweat for approx. 1 min.
- Pour in the tomatoes and the water. Let simmer for 15 minutes. Stir in peanut butter, vinegar, sugar and a little salt and simmer for another 5 minutes. Serve sprinkled with fennel greens.
