- Wash tomatoes and arugula. Cut open the tomatoes, remove the stalk and dice. Cut the rocket into small pieces. Peel and dice the onion. Put the tomatoes, rocket and diced onion in a bowl. Make a marinade from vinegar, oil, salt and pepper and pour over the salad. Mix everything well.
