Ingredients
- 4 tomato (s)
- 1 piece (s) ginger
- 1 handful spinach leaves
- some salt and pepper
- 2 tablespoon olive oil
- 2 teaspoons cranberry vinegar, alternatively raspberry vinegar
- 2 teaspoons red wine vinegar
- some cinnamon
- some allspice
- some xylitol (sugar substitute)
- 1 ½ tablespoon coconut milk
- some mini mozzarella
- 2 stalks coriander green
- some balsamic cream

- Cut the tomatoes into pieces, season with salt and drain well in a sieve for a few minutes.
- Wash the spinach leaves and let them drain well, if necessary pat dry with a paper towel.
- In the meantime, cut the ginger into small cubes and make the dressing from pepper, oil, vinegar, cinnamon, allspice, sugar and coconut milk.
- Mix the drained tomatoes with the ginger and the dressing and let it steep for at least 15 minutes.
- Arrange the spinach on a salad plate, place the steeped tomatoes with the dressing on top of the spinach in the middle, sprinkle with mozzarella balls and torn coriander greens and decorate with a few sprinkles of balsamic cream.
