Ingredients

  • 400 g beef fillet (s)
  • 0.5 ½ cup sour cream
  • 4 cl whiskey (bourbon)
  • 1 tablespoon peppercorns, green
  • some oil, neutral or clarified butter
  • Sea salt and pepper, freshly ground
  • 1 sprig thyme
  • 1 garlic clove (s), peeled and then just squeezed

Instructions

  1. Cut the fillet piece into 4 tournedos of equal thickness (please do not fry in the fridge), have all the ingredients ready.
  2. Lightly grease a cast pan / steak pan with a little clarified butter or neutral oil. Preheat the plate in advance.
  3. Let the pan get very hot and fry the tournedos together with the pressed garlic and the thyme sprig (remove both when turning the meat) on each side for approx. 2 - 3 minutes. Place on the warmed plate, season with salt and pepper and cover briefly. Switch off the pan and pull it off the hot plate. Pour the whiskey into the pan and stir in the sour cream immediately. Add green peppercorns, add a little salt and pepper. Serve immediately with the tournedos.
  4. Gratinated potatoes, croquettes or duchess potatoes, fresh young green beans, briefly tossed mushrooms / chanterelles or baby carrots are suitable as a side dish.
