Ingredients

  • 3 egg (s)
  • 60 g parmesan, freshly rated
  • 300 ml cream
  • 6 tablespoon flour
  • salt and pepper
  • 8 small turkey schnitzel, a approx. 60 g
  • 100 g onion (s)
  • 250 g mushrooms
  • 50 g cooked ham
  • 1 tablespoon oil
  • 50 ml white wine
  • 1 clove garlic
  • 3 tablespoon clarified butter
  • 1 bunch chives

Instructions

  1. Whisk eggs, cheese, 100 ml whipped cream and 4 tablespoons flour. Salt, pepper. Salt and pepper the schnitzel and turn in the remaining flour (2 tablespoon).
  2. Cut the onions into fine strips, quarter the mushrooms. Cut ham into strips. Fry the onions and mushrooms in the oil, deglaze with the wine, add 200 ml of cream. Let simmer for a few minutes. Press the garlic into the sauce, season with salt and pepper. Add the ham, keep the sauce warm.
  3. Pull the schnitzel through the dough with a meat fork, fry in the hot clarified butter on each side for 2-3 minutes until golden brown.
  4. Put the chives in rolls in the sauce, serve with the schnitzel.
