Ingredients

  • 1 cup rice, (Yasmin rice), uncooked
  • 1 pointed pepper, red
  • 1 carrot (s)
  • 3 spring onion (s)
  • 1 small Can corn
  • 6 radishes
  • 125 g mozzarella, or feta
  • 1 handful olives, green or black, pitted

For the dressing:

  • 1 some lemon juice, from one lemon
  • 2 tablespoon pomegranate syrup
  • 6 tablespoon olive oil
  • 2 cloves garlic)
  • 1 tablespoon dill
  • 1 teaspoon mint, dried
  • 0.5 teaspoon ½ salt
  • 1 teaspoon paprika powder, noble sweet
  • 1 pinch pepper
  • 1 ½ teaspoon honey, or sugar
  • some pepper

Instructions

  1. A super delicious, quick and refreshing Turkish rice salad that is perfect for a barbecue evening or just as a side dish.
  2. 1. Mix all ingredients together for the dressing.
  3. 2. Cook the rice according to the instructions on the packet and season with salt. Then place in a bowl and add the dressing. Mix everything together.
  4. 3. Cut the peppers, carrots, spring onions, radishes and mozzarella into bite-sized pieces and mix with the rice and all the other ingredients.
  5. 4. Serving.
