Unsweetened Potato Brush

Potatoes can be used to make hundreds of dishes. Or if you want to try something interesting, try the potato brushwood. Potato brushwood turns out to be very tender, tasty, and airy.

Cook: 1 hour 30 min.

Servings: 6

Ingredients

  • Potatoes – 660 g (peeled weight)
  • Flour – 250 g
  • Eggs – 2 pcs.
  • Salt – 1 teaspoon
  • Vegetable oil for frying – 300 ml

For the filling (optional):

  • Sour cream or ketchup – to taste

Directions

  1. Sift the flour. Peel and wash the potatoes.
  2. Pour potatoes with clean water and cook until cooked over medium heat. The potatoes will take about 30 minutes to cook.
  3. Drain the water from the finished potatoes and cool slightly. Then mince the potatoes using the finest wire rack.
  4. Divide the eggs into whites and yolks. Add yolks and salt to a bowl of mashed potatoes.
  5. Toss the puree with salt and yolks.
  6. Beat the whites in a separate bowl until a firm foam.
  7. Transfer the beaten egg whites to the puree.
  8. Pour in 200 g of sifted flour. The amount of flour indicated in the recipe may vary slightly. It depends on the density of the mashed potatoes and the category of eggs.
  9. Knead the dough. It should be soft and comfortable to roll out.
  10. Separate a small portion of the dough, sprinkle the remaining flour on the board, and roll out the dough into a layer 3-4 mm thick. Cut the dough into strips 12-13 cm long and 3 cm wide.
  11. Make a longitudinal cut in the middle of each dough strip, not reaching the edges, about 2 cm.
  12. It is convenient to cut the dough with a pizza knife.
  13. Thread one end of the strip through the notch.
  14. And turn it out.
  15. Prepare the rest of the dough in the same way.
  16. Pour vegetable oil into a small saucepan with a thick bottom, heat it up. Dip prepared brushwood into boiling oil. Saute the brushwood over a slightly above medium heat until golden, about 5 minutes.
  17. Then gently turn the brush over to the other side and also continue to fry until golden brown for a few minutes.
  18. Place the finished brushwood with a slotted spoon on a paper towel to get rid of excess oil.
  19. Fry all the brushwood in oil.
  20. Potato brush is especially tasty hot, immediately after cooking. Sour cream or ketchup can be served with brushwood. Bon Appetit!
