Ingredients

For the meat: (kebab)

  • 500 g round beef or lamb
  • 0.5 ½ bunch parsley
  • 1 teaspoon, heaped Pul beaver
  • 1 teaspoon cumin powder
  • 1 teaspoon pepper, ground
  • 1 teaspoon, heaped salt
  • 1 tablespoon olive oil
  • 1 medium tomato (s)
  • 1 small onion (s)

For the sauce:

  • 500 ml tomato puree
  • 1 large tomato (s)
  • 1 teaspoon paprika powder, noble sweet
  • 1 teaspoon pepper
  • 1 teaspoon, heaped salt
  • 40 g butter
  • 3 sugar cubes or 1 teaspoon sugar

Also:

  • 0.5 ½ flat bread (s) or 4 rolls
  • 500 g yourt, Turkish or Greek
  • 30 g butter

Instructions

  1. For the kebab, peel the tomato and cut or grate it very finely. Grate the onion. Chop the parsley into small pieces.
  2. Knead everything with the minced meat and the remaining ingredients in a bowl with the dough hook for at least 5 minutes and place in the refrigerator for at least 1 hour.
  3. Then divide the meat dough into 6 portions for the kebaps, form long sausages and pull the kebaps onto 6 flat skewers. Grill on both sides for 3 - 4 minutes on charcoal.
  4. For the tomato sauce, lightly brown the butter in the pan, add the peeled and finely chopped (preferably grated) tomato, salt, pepper, paprika and sugar and fry briefly.
  5. Then add the tomato puree, stir well and bring to the boil. Let the sauce simmer with the lid on for at least 15 minutes over low heat and stir from time to time. Season the sauce to taste (it should taste slightly too salty).
  6. To serve, cut the bread or rolls into 1 - 2 cm cubes and toast them in the butter. Put 1/4 of the bread cubes on a plate.
  7. Either pour the sauce over it and place the yoghurt (room temperature) separately on the plate or pour the yoghurt over the bread cubes and pour the sauce over them. Then put 1 1/2 kebaps on top and serve.
  8. Tip: If you grill peppers or tomato halves and serve with them, it tastes even better.
