Ingredients
- 6 wrap (s)
- 1 can chickpeas, approx. 250 g
- 1 red pepper (s)
- 1 zucchini
- 150 g cherry tomato (s)
- 1 onion (s), red
- 3 tablespoon oil for frying
- 1 teaspoon curry powder
- salt and pepper
- 1 lime (s), zest and juice it
- 1 avocado (s)
- 1 teaspoon coriander

- Put the chickpeas in a colander, rinse with cold water and drain. Clean and wash the pepper and zucchini. Dice both small. Wash and halve the tomatoes. Peel the onion and chop finely.
- Heat oil in a pan. Fry the bell pepper, zucchini and onion in it, turning, for about three minutes. Add the chickpeas, tomatoes and 1 teaspoon of curry powder and fry for another two minutes. Season to taste with salt and pepper.
- For the guacamole, halve the lime and squeeze one half. Use the remaining half for other purposes. Halve the avocado lengthways and remove the core. Remove the pulp from the skin with a spoon and cut into large pieces. In a tall mixing beaker, finely puree with the lime juice and zest with a hand blender. Season to taste with salt and pepper.
- Brush the wraps with guacamole, spread the vegetables on top, sprinkle with coriander and roll up to make wraps.
- 390 Kcal per serving.
