Ingredients

  • 150 g quinoa
  • 300 ml vegetable stock
  • 4 tomato (s)
  • 1 onion (s)
  • 1 zucchini
  • 2 bell peppers, yellow
  • 2 tablespoon olive oil
  • 1 salt
  • 1 squirt lemon juice
  • pepper
  • Cumin powder

Instructions

  1. Rinse the quinoa under lukewarm water until it is clean. Bring the stock to the boil in the pot, add the quinoa and simmer covered over a low heat for about 15 minutes. Then take it off the stove again.
  2. Wash, quarter, core and dice tomatoes. Peel and dice the onion. Wash, clean and dice the zucchini. Wash the peppers, cut in half, clean and also dice.
  3. Now heat the oil in a pan. Steam the onions in it over medium heat until translucent. Add zucchini and pepper cubes and sauté for 3 - 4 minutes. Mix in the tomatoes, let simmer for 3 - 4 minutes and season with salt, lemon juice, pepper and cumin.
  4. Then mix the quinoa with the vegetables.
