Quinoa with Vegetables and Teriyaki Sauce

A very unusual, healthy, and completely vegetarian dish of quinoa and vegetables with teriyaki sauce, for fasting, or a bright and soulful side dish for meat or fish.

Ingredients
- Quinoa – 100 ml
- Broccoli – 1 pc. (small)
- Spinach – 1 large handful
- Bulb onions – 1 pc.
- Green onion – 2-4 feathers
- Garlic – 3-4 cloves
- Basil – 3-4 stalks
- Teriyaki sauce – 3-4 teaspoon
- Olive oil – for frying
How to make quinoa with vegetables and teriyaki sauce:
Directions
- Boil the amount of quinoa you need according to the instructions on its packaging. I cook for two. While the quinoa is boiling, randomly chop the onion.
- Cut off only inflorescences from a small broccoli cabbage and cut them into smaller pieces. (We use the stems in vegetable broths or feed them to rodents. :))
- Chop a few green onion feathers.
- Cut the garlic cloves into slices.
- Grind the leaves from several basil stems. We also need a handful of spinach, which you don’t need to chop. The size of your handful doesn’t really matter, because, after cooking, spinach shrivels and almost disappears, no matter how much of it. 🙂
- In a frying pan in olive oil, fry the onions until soft.
- Add broccoli and fry until softened.
- Add garlic and fry for another 1-2 minutes.
- We reduce the fire. Add spinach and a few teaspoons of teriyaki sauce to the pan.
- Stir and simmer until the spinach softens. After that, remove the pan from heat, add basil and green onions. We mix.
- Serve quinoa with vegetable sauce.
