Ingredients
- 1 ½ liters water
- 2 tuber / s fennel
- 2 small chilli pepper (s), fresh or dried
- 1 piece (s) ginger, fresher
- 1 bunch carrot (s)
- 1 parsley root (s)
- 2 large onions
- 1 bunch soup greens
- 2 cloves garlic, whole
- 2 spring onion (s)
- 1 vegetable stock cube
- 1 bay leaf
- 5 juniper berries
- 1 teaspoon, leveled curry powder
- 1 teaspoon, grained marjoram
- 1 teaspoon, leveled thyme
- 1 bunch parsley
- salt and pepper
- some oil for frying

- Roughly chop all the vegetables except for the spring onions and 2 carrots (for later adding). Chillies and garlic can be left whole.
- Roast the onions in the hot oil, add the remaining vegetables and the curry powder and sauté briefly. Deglaze with water. Add the bay leaf and juniper berries, add thyme and marjoram, season with salt and pepper (not too much) and simmer for around 2 hours over medium heat.
- When the vegetables are soft, pour everything through a sieve and collect the liquid in the saucepan. The cooked vegetables can be disposed of.
- If necessary, season the vegetable broth again with salt, pepper and instant vegetable broth to taste. Cut the rest of the carrots into small pieces and add to the liquid, cook until al dente.
- Thinly slice or slice the spring onions and add to the soup. Wash and finely chop the parsley. Add to the soup and serve the soup hot.
- This soup warms and the vegetables it contains may have a beneficial effect on colds.
- I created this recipe so that vegetarians can also enjoy a soothing soup in the event of illness. But it also tastes very good to my meat-eating husband.
