Ingredients

  • 2 zucchini, each approx. 0 cm long
  • 180 g feta cheese
  • 200 g tofu, natural, firm
  • 1 tablespoon, heaped tomato paste
  • salt and pepper
  • 1 teaspoon vegetable stock powder

Instructions

  1. Wash the zucchini, carefully cut in half and scoop out with a teaspoon.
  2. Put 1/4 of the mixture in a bowl and chop up. Crumble the feta cheese and add it. Grate the tofu finely with the help of a chopper and roast it well in a pan over medium heat, season with stock powder. Add to the bowl with the tomato paste. Stir, add a little hot water, if necessary. Season with salt and pepper and pour the mixture into the hollowed out zucchini. Place in a flat oven dish.
  3. Bake in a hot oven at 200 ° C top / bottom heat for approx. 20 - 30 minutes (depending on the oven).
  4. Tip: Of course you can also add grated cheese if you like.
