Vegetarian Zucchini Dumplings

  • Garlic – 1 Clove
  • Nutmeg – 1 Teaspoon
  • Vegetable oil – 1 teaspoon
  • Allspice – To taste

Directions

  1. Prepare the food you need. Wash the zucchini, peel if necessary. Peel the garlic. Sift the flour.
  2. Add salt, bran to cold water and sift almost all the flour. The flour may take a little less. Knead a soft dough that sticks a little to your hands. Add the remaining flour as needed. Place it in a bowl lightly oiled with vegetable oil. Cover with cling film and refrigerate to swell gluten for at least 2 hours (can be left overnight).   3. Cut the zucchini into small cubes of about 5 mm. Chop the garlic. Add nutmeg, salt and pepper to taste. Lightly grease the pan with vegetable oil and heat. Simmer vegetables until soft with the lid closed over low heat for 5 minutes.
  4. Dust the work surface with flour. Divide the dough into 4 parts, roll each into a sausage and cut into equal pieces. Roll out a piece into a round cake, in the center of which place 1 teaspoon. fillings.
  5. Bend the flat cake in half, secure it carefully along the edges and connect the ends together.
  6. Dip the dumplings in boiling salted water and cook for 4-5 minutes after they float up.
  7. Brush the finished dumplings with olive oil, pepper to taste and serve with fresh herbs.
