The classic fish for making herring is the virgin female herring that has not yet spawned. Hence the extravagant name of my recipe. If you can, you should only use Glückstadt matjes. It is specially made and tender like butter at room temperature.
First, squeeze out the half lime, rub the peel and put both in a bowl. Now peel the apple, remove the core and cut the apple into eighths. Now cut down thin slices or strips and add them to the bowl with the lime. Always mix immediately so that the apple does not turn brown from the acid.
Peel and halve the onion, cut the halves again in the middle and cut down fine strips of onion. Also put the onion strips with the finely chopped dill and the fruit vinegar in the bowl and mix everything vigorously.
Set aside for marinating.
Put quark, sour cream and only 5 tablespoon whipped cream in a tall mixing vessel. Add the salt, the ground pepper to your own taste (I use plenty) and the sugar and whisk thoroughly with the mixer.
Now we still have whipped cream left. This allows you to adjust the consistency of the sauce personally later, for those who like the sauce a little more liquid.
Also add the contents of the mixing vessel to the bowl and mix everything thoroughly.
Let the sauce soak in the refrigerator for 2 to 3 hours.
Then arrange the herring fillets on plates at mealtime and pour the sauce over them.
Personally, a good piece of buttered black bread is enough for me, but jacket potatoes with melted parsley butter, lobscouse or fried potatoes are also possible. All great companions to the main character Matjes. A delicious pickled cucumber is still an option.
